Basic Pico de Gallo

                                    a.k.a Salsa Mexicana

8 Roma Tomatoes, diced

1 medium white onion, diced

2 Jalapenos (or 1 Jalapeno and 2 Serranos for added heat), finely diced

1/2 bunch cilantro, chopped fine

Juice of 1 lime

1 finely minced garlic clove, optional

1 1/2 teaspoons  salt

1/2 teaspoon sugar

Mix all ingredients together, taste test, adjust seasoning if needed.

Note: Experiment with ingredients such as different peppers, different herbs, different citrus so you can define your own favorites.

As this is fresh salsa, ensure you refrigerate it.
